butter chicken

ingredients
- 2 lbs boneless skinless chicken thighs
- 3 tablespoons butter
- 1 onion, diced
- 1 tablespoon fresh ginger, grated
- 5 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1/2 teaspoon turmeric
- 1 cinnamon stick
- 3/4 teaspoon kosher salt (or to taste)
- 1/4 cup chicken broth
- 14oz can crushed tomatoes
- 1 teaspoon granulated sugar
- 1 cup heavy whipping cream
- marinade
- 2 tablespoons fresh lemon juice
- 2 teaspoons garam masala
- 1 tablespoon cumin
- 1 cup plain yogurt
process
- marinate the chicken in the marinade for at least 30 minutes, preferably overnight
- remove the chicken from the marinade, let the excess drip off
- brown the chicken in 1 tablespoon of olive or vegetable oil until browned on both sides, about 6 minutes, then remove from the pan and set aside
- melt the butter over medium heat and cook the onions until tender
- add the ginger, garlic, and spices, cook for 1 minute or until fragrant
- add the chicken broth, browned chicken, crushed tomatoes, and sugar, simmer for 10 minutes or until slightly thickened
- add the cream and cook another 5-10 minutes, discard the cinnamon stick
- top with cilantro and serve over rice
